Fashion Friday: My Fall wish list

Hi everyone, here are a few items i’ve been drooling over for fall. I really need to go shopping, when we were getting ready to move I got rid of sooo much clothes. My closet was beginning to look like I was a hoarder. During this cleaning spree it seems I got rid of most of my fall/winter clothes. So when it rained the other day ( Hooray by the way, we’er in a serious drought here in California you know) Any who I was very unprepared for the wet weather.  All my boots, I did not get rid of those, but they are in boxes in storage. I need to get those out. Most of my sweaters I have are very thin, so I really want a big comfy knitted sweater. Cant wait to get to shopping!

Chocolate chip cookies

These Chocolate chip cookies are seriously the BEST cookies!! They are so soft and chewy, I can shamelessly probably eat all of them. I found the recipe on My Natural Family, when I was doing my 30 day Paleo challenge and have probably made them about 3 times since them. Jon and Juli love them and like helping me make them. 
I really kind of took to this type of baking using real ingredients, although at first I thought it was such a headache. I just didn’t understand why I had to use so many different types of ingredients to make something so simple. I had to educate myself a lot when I did this challenge. I have to say now when I do bake something I like to use these alternative ingredients. It definitetly make me feel less guilty enjoying yummy treats like these cookies.
By the way Julian and I plan on doing another 30 days of this challenge. I’m so happy he’s decided to do it with me. Like I said before I did like the challenge it really opened my eyes to read labels and look at all the unhealthy processed junk we were putting in our body. 

Makes about 20 small cookies
Prep: 30 Min. 
Cook Time: 15 Min.
Total time: 45 Min.
Ingredients
  • 1 C. Almond Flour
  • ¼ C. Coconut Flour (I used 2/4C.) 
  • ¼ C. Tapioca Flour (I did not use tapioca flour, I just added more coconut flour)
  • ½ teaspoon Salt
  • 1 teaspoon Baking Powder
  • ½ teaspoon Baking Soda
  • ¼ C. Pure Maple Syrup (I used Agave nectar)
  • ¼ C. Raw Honey
  • ½ C. Coconut Oil, Melted
  • 2 Eggs, room temperature
  • 1 teaspoon Vanilla
  • 1¼ C. Paleo Chocolate Chips ( I found them at Whole Foods for about $4.00)
Instructions
  1. Preheat oven to 325 degrees. Line a baking sheet with parchment paper or anon-stick mat.
  2. In a mixing bowl, combine the almond flour, coconut flour, tapioca flour,salt, baking powder, and baking soda.
  3. In another bowl, stir together the maple syrup, honey, coconut oil, eggs, and vanilla.
  4. Combine the wet ingredients with the dry ingredients, stirring together well. Add the chocolate chips , distributing well throughout the dough.
  5. Let the dough sit for 5-10 minutes so that the coconut flour can fully absorb the liquids.
  6. Using a 2 T. Scoop, place the cooking on the prepared baking sheets 2″ apart.
  7. Bake cookies in preheated oven for 9-10 minutes, or until just starting to turn golden brown on top.
  8. Remove from the oven and let sit on the pan for 5 minutes.
  9. Remove carefully from pan with a spatula and store in an airtight container.

Back to School Party

Like every little party I plan I was running around like crazy trying to finish last minute details. So I didn’t get to finish a couple of the things I wanted to do for the party, but it was ok. The kids had a lot of fun and that was all that really matters. Hooray they are back to school!!

Cupcakes were plain because the kids decorated them.

Creative space

After finally putting everything up in the rest of the house, I finally got around to finishing my desk. I found it unfinished it used to be white and beige and very beat up. I wanted to keep it white, but surprise when I came home from work Julian and Jon had already started painting it black. Everything in our apartment was black all of our furniture, so when we bought our home I really wanted to lighten it up. Since they had already started painting it black I didn’t want to change it. 
I put it in front of our bedroom by the window. Which i’m still trying to decide what kind of curtains to put up there. All the frames are from Ikea except the one with the lime green trim that one is from Hobby Lobby. It used to be orange with the lime green trim, I got it because it was on clearance for $1 maybe because it was lime green and orange or because of the chip it has at the bottom. I had extra black paint so I just painted it. 
I really like how this space came out, when I sit here to blog or class work I feel very creative. Now I just have to get a comfy chair.

Fashion Friday: Good hair day

I woke up like this (Beyonce voice) my hair was in a usually good mood today. Maybe it has to do with i’ve been thinking of cutting it off, maybe about shoulder length. I actually had some free time the other day but the salon was already closed. I took it as a sign maybe my hair is not ready yet. This top I got it earlier in the summer, I got it a size too big and the back hangs too low for me to bare, so I just threw on over this jean jacket iv’e had for years.

The Cronut

 About a month ago Bakers Doughnuts here in Sacramento followed me on Instagram. I can’t believe I have never been there before, I’ve passed by this place tons of times.  They are right across the street from Krispy Kreme, so this mom and pop shop had to definitely step up their game. I finally got to try a Cronut it was so light and flaky, I got the red velvet cronut and it was just the right amount of sweetness (mmmmm get in my belly). If your ever in the Sacramento area I would recommend this place. I saw that they even started serving ice cream doughnuts sandwiches with unique flavors like Ube and Thai tea yum!
